I have thought of GoW2, L4D 2, Halo 3, Top Spin 3 (only sports game she will play) and Resdident Evil 5.......are there any others?Also - are they generally split-screen? or are you able to both be on-screen (when playing off-line)?

I don't know about top spin but all the other games you listed support split screen. And I recommend all the games you listed although I think Left 4 Dead 2 would be much more enjoyable with 4-players(meaning you'd need to go online to find the other two). I'd say the same for the original Left 4 Dead.
Not a deal breaker, but what is annoying is if you're playing a wide screen in Halo 3 or Resident Evil 5 they do not split the screen like normal. Halo 3 puts two bars on the sides of the screen making the picture a 4:3 aspect ratio(a square like old tvs) and then it cuts that picture in half. Resident Evil 5 does something similar except instead of stacking the pictures like normal, each one goes on a different corners of the screen. Player one is on the upper left corner of the screen and player 2 is on the bottom right. Another thing thats odds is that player 2's character is to the far right of the picture when typically in third person shooters the player's character is on the far left.
If you play with a wide screen then I recommend only using a large tv for Halo 3 and Resident Evil 5 because of the way they cut the screen each players' view is smaller than normal so on a small screen like a twenty inch split screen is a no no for these games. Same goes for Halo 3: ODST. I recommend it, it's fun, but it crops the screen in the same fashion of Halo 3 so if you intend to play on a wide screen, make sure it's a big one. Call of Duty: World at War is another one I recommend but it's the same case as RE5 where you have two small boxes on the top left and bottom right of the screen if you're using a wide screen, so make sure your screen is big. Gears of War is another good game, and like Gears 2 it's good on wide screen.
I'd recommend more games but these are the only co-op ones I've played locally. I played and enjoyed the co-op in Army of Two, Army of Two: The 40th Day, Splinter Cell: Conviction, Unreal Tournament III, Rainbow Six Vegas, Rainbow Six Vegas 2 over xbox live but I can't speak of the offline experience.
