Actually all new games are showing "720p/1080i/1080p" in the resolution box. Since the dashboard update that added 1080P this has been the pattern. However, the story doesn't end there.
Currently the only officially announced 1080P games are NBA Street Homecourt and Vrtua Tennis 3. Both EA and Sega published press releases announcing support for native 1080P resolution. Other games, when 1080P is your output resolution, use the 360's internal scaler to smoothly create a 1080P image from the game's native 720P (usually) rendering.
You won't see a lot of 1080P games on any system. The tradeoff for the higher resolution is usually a steady framerate. While developers are likely to find more efficient ways to generate their graphics, the lure of more cycles for physics, AI and other features will keep engines at 720P.

That's not true at all. I get far less jaggies at an upscaled 1080p than I do at 720p.
 Also, I've never understood people saying the screen needs to be bigger than such and such to see a difference between 720p and 1080p. Can you notice a difference between 1280x720 and 1920x1080 on your pc monitor? Well, take that for what it's worth. 720p has a total of 921,600 pixles where as 1080p has 2,073,600 pixels. So, 1080p has more than twice the number of pixels than 720p. Try and tell me you won't notice that on any size tv...
