Fallout 3 is a great game. There's a hge world to explore, lots of quests, and insane action. If you're a real RPG fan you can easily grow to care about the world around you. The Karma system is one of the best I've seen in a game. You can never get to a point where everyone likes you. If your good, the raiders and Talon Company will be all over you. You bad, you'll have the citizens of the Capital Wasteland will fear you and the Brotherhood will be circumspect.
You could also check out Lost Odyseey. It's a JRPG made by RPG legend, Hironobu Sakaguchi, creator of Final Fantasy. You'll find a lot of the same gameplay you've seen, but that's not a bad thing. And the aim rings and the serious, interesting story add a bit of flare to the game.
Mass Effect is another great one. It's an action RPG where you take control of Command Sheppard and go on an epic quest through a living universe. You get loads of different armors, weapons and biotics. The combat is a bit like Gears of War, where you won't survive long without cover. The mechanic works good and the gunplay is something to look foward to. The conversation system is the best in any game to date. You choose the basic theme of what you'll say and then Sheppard will say some lines and the NPCs will react accordingly. It's usually that the Paragon(good morale) choice is the top right, the normal is the middle right, and the Renegade(bad morale) is the bottom right of the conversation wheel.
