How do you replay Assassins Creed?

I've beaten the game, and I basically wanted to replay the game over, but with all my current flags status and templars killed numbers etc. I went into the Anibus and chose the first level, I got to like a certain part in the first chapter, then decided to stop. I realize now, that theres no way to continue my saved checkpoint, and not only that, I decided I'd just choose one of the parts in the first chapter, called Guardian or something cause it's closest to where I left off, but instead of loading me there, it keeps reseting me to the beggining of the first chapter. This is really confusing/ annoying me, I just wanna replay this game, but the devs can't even make it simple to do that and keep your stats without all completing overwriting everything, wtf?

Jump back into the machine and select a memory block you want to go to.

Its alright, it saves all your flag status and stuff regardless of where you chose to start.

I know that. I want to replay the game from start to finish while keeping my flag stats and templar stats etc. I can't do this because if I choose new from the main menu, it tells me its gonna overwrite all my current data, which I assume means flag stats etc. And if I choose a mem block, it just makes me start it over from the first part of that mem block everytime, so there doesn't seem to be a way to checkpoint during during a mem block chapter...?

I'm not sure if how you can replay it although don't try to choose new game as it does erase anything you found like flags, etc.

u have to go into the room with a bed in and it will say somin like is that blood then some loooooooong ass credits that u will get an achivement for watching and then walk back to the animus and get in and choose the memory u want to repeat

I know that... The problem is the game resets itself to the beggining of every mem block you left off at.

uhhhhh......if you wanna kill a specific boss....redo the memory block where that specific boss is located....if you just wanna roam around finding flags and killing templar knights.......just load the second to last block (the one before the Robert assassination) i think it's block 7.....then every part of every map will be unlocked...and youll be able to roam wherever you wish.....thats what i did....and it never reset the game (after the end credits when the game is over hop back onto the animus and select the block from there)
