after you click on demo it will bring up a screen that says easy, medium, or hard. when that screen comes up hard mode should be highlighted and press A to play it

actually that's not how you do it.....
LOL yea that doesnt even make much sense, but I also know how to do it. You have to go to your 360 personal settings and switch the default game difficulty's to hard.
