I just recently got an Elite for Christmas but was wondering if I had to register my console's srial code, or would it be on a card like the ones that come with games?

You create a silver account and it's auto-upgraded to gold for one month

you can register your console on xbox.com. remember registering your console does not have anything to do with Live subscribtions.

youll need to have a gold subscribtion to send messages at xbox.com

on you xbox itself, silver will let you send messages and the ability to chat and download stuff from marketplace.

once you create a xboxlive account on you xbox, youll get a 1 month xbox live gold trial for free.

If you made an account on Xbox.com first and then you bring that account over to your 360, then you won't get the one month trial. At least I didn't. But a 3 month Gold card is only $20 and it's well worth it.
