Red Dead Redemption Bounty Hunting Help

Ok, say if you capture a bounty and take them to the police, will they be gone for good or will you have to deal with them again?

It depends i guess, i think i may have captured the same guy twice a few times. Sometimes even if you kill the criminal they are still back on the bounty board. This is probably due to the fact that RDR will only have so many names stored on it and they will be selected randomly for going up on the bounty board.
