Just because they havn't announced a release date doesn't mean it isn't coming. They havn't announced a relase date for RE5 as a whole 360 and PS3 because they are nowhere near finished with it. When RE4 was complete and they announced RE5 they said the game would take around 4-5 years to make and for it to be of the same quality as RE4. Its hasn't even been 4 yet.

A few minute portion of the game created as a demo is not represenative of the game as a whole. The game can be very very far from complete and a technical demo of that sort be created. I learned this by wasting my time watching the DVD that came with Halo 2 haha.
Code Veronica was made before the contract was signed and the contract allowed side story games like Dead Aim and Outbreak to be made because they were not part of the plotline. Capcom broke the contract indefinitely when they ported RE4 to the PS2. This information is available. And most RE fans know this already anyways.
