I am going to have to go with the Dead Rising bosses, most of them were hard but it doesn't matter what difficulty they were, they were fun to beat. The Jailmates in the park was the best boss for me in Dead Rising because it had some strategy to it, but it was mainly because of the song that played during it. I can't get enough of that song!
i dont know about hardest, but the easiest boss for me was the guilty spark robot in halo. i just picked up the spartan laser and made swiss cheese out of the annoying talking light bulb

Mankaar Camoran- Oblivion (I think that's how you spell his name) unless you are a straight up warrior class, you are almost completely screwed against him and his magicka restistance.
The Boss at the end of Knights of the Nine- Oblivion. It was just so cool fighting a golden demon while you are floating in the air and once you kill him you fall back to the ground and his sword is falling right in front of you.
The chainsaw wielding clown-Dead Rising
Of course none of these bosses compare to the crazy ass bosses of the Metal Gear Solid series.

I tried to get some boos in the bar on the citadel in Mass Effect, but the Bartender kept saying he only had information and I was like what the Hell? So I guess the best boos on the 360 would have to be in Oblivion, maybe you can get some good boos in GTA IV, but I haven't gotten that game, so whatever.
