If you like Arcade racers, Forza Horizon 3's entire campaign can be done co-op, it's amazing. Warhammer Vermintide is great for co-op as well, it's not too complicated to learn(some people describe it as a medieval Left 4 Dead) . Part 2 should release in the next few months though so maybe wait for that.
There's just so much stuff out there it depends what you are looking for, Far Cry 5 just came out and much of the campaign can be done co-op, tons of vehicles to drive and I was flying with someone in the hydroplane it was awesome. It's an open world shooter and there is a lot of stuff to do. The campaign progress only happens for the host, although the player who joins can keep all his progression and skills he earns while joined with another co-op player host. Sea of Thieves is awesome with others as well but it's a different kind of emergent gameplay experience and some people think the content is limited now, but it's going to keep getting support according to the dev and if you are on the fence maybe check it out through Gamepass.
Gears 4 Horde mode is great fun too. I also like Halo 5 PVE FireFight mode. You can also check out some of the F2P stuff, I was playing the recently released TERA and I think it's great because it focuses more on action and less of everything else. It was released in 2011 on PC and just came out recently on consoles. The game performance struggles sometimes but overall It runs great on my X, and its free.
I'm mostly referring to Co-op play by the way as per your title, but many of those games have PVP modes as well. For me I am overwhelmed by the amount of online games on my plate, it's not a question of what I like but more of time management and how I can have time to play all the stuff that interests me.
