BF:BC was pretty easy as you could die a million times and still beat it. Certain Giga bosses were hard in Tales Of Vesperia though but I haven't played any games that were exceptionally hard.
Hardest for me is Oblivion on the hardest difficulty, mostly because I don't cheat or dupe and you're pretty much outmatched by leveled enemies the entire game. Second hardest is Far Cry 2 on the hardest difficulty, without a full stealth package and good tactics every checkpoint pretty much spells death. On the opposite end of the spectrum, I found Mass Effect way too easy thanks to a lack of actual combat and plentiful cover. But the easiest game I've ever played on Xbox 360 is Battlefield: Bad Company thanks to the infinite, always available Auto-Injector. I mean come on, really? Instant full health regeneration every thirty seconds or so? Shameful.
Hardest is Ninja Gaiden 2 on the highest difficulty. Hell, the medium difficulty is harder than most games.
Easiest? Well.. Easiest to understand probably Uno, but easiest as far as finishing the campaign would be Bioshock, BFBC, Fallout on Easy I'm sure is a breeze because the hardest difficulty ain't too bad, and other random games..
Hardest: Ninja Gaiden II...on hard i guess, hell normal is really hard too, or perhaps Dead Space on Hard. Easiest: ...hmmm i would have to say Guitar Hero XD
def ninja gaiden 2 because most games you can beat on the hardest difficulty if you just work at it but on NG2 the hardest diffculty is impossible even for the best.
Hardest : Wolfeinstein on Uber Difficulty / F.e.a.r at Maximum / Call of duty 4 Veteran / Gear of war II at Insane Alone Good Luck ;) Easiest : Prey & Oblivion at Easy
