AC isnt very hard. GTA 4 had some tricky parts, Far Cry 2 was pre hard, Gears 2 was somewhat hard, but I'd hafta agree with CharlyMurphy, any LEVEL, let alone game, of Call of Duty on Veteran is nigh impossible.
The Ninja Gaiden series is extremely, extremely difficult. Easily one of the most frustrating games I've ever played...maybe even more than those damned grenade parties on COD
