I found The Godfather was great for a weekend and the achievements were pretty easy with it. Gun is another one that's a god weekend game, with easy achievements. Those are the only ones I can think of that I played that are good for achievements
Quite a few games that can last you the weekend if you haven't played them already... Gears of War, Rainbow Six, Bioshock, Medal of Honor (Subpar in my opinion, but it's there) Command and Conquer, Skate, etc. The list goes on and on.. just started to get into the Fall rush of games.

Stranglehold is very short, I could've beaten it in 1 night but was very tired. It's only 7 levels, I imagine it might last more then 1 night on Hard or Hard Boiled but I couldn't start playing the game on those difficulties and after I beat it once I didn't want to play through it again
Get The Darkness. It's easily beatable in a weekend, and the presentation and atmosphere are amazingly awesome, esp. if you have an HDTV. Plus, the multiplayer blows so you won't miss anything once the single player is done. I just rented it from Gamefly and it's great!
I just put Halo 2 in my 360 and forgot how awesome the Halo series is! Also, I wanted to getin the right mindframe for Tuesday's release and I am playing the campaign in heroic mode! For a last generation game, its graphics and gameplay is prettyawesome. Sorry, no achievement points!

I got more from one play through in Stranglehold, but have killed much more time and had more fun in Skate
