Dude do yourself a favor and play Bioshock. If you insist on no shooters then I'd recommend Dead Rising, either one will give you the most unique experience on your 360.
Virtua Fighter 5 and Dead or Alive 4 are the two best fighting games out for the 360 right now. For racers, look no further than Forza 2 and Project Gotham Racing 4. RTS.... you can't go wrong with Command and Conquer 3
