In the interview with Cliffy B on "Inside Xbox" he said that something about being able to ride a Brumak in the demo. Im not sure if he meant the stage demo at E3 or if their is actually a demo coming out.
I'd say RE5, but I can just go play RE4 again to know exactly how it controls and moves. I'd really like to try Force Unleashed to see if its really as good as its been looking.
A Fallout demo is highly unlikely, seeing as an Oblivion demo was never made as their open structure makes for a hard game to section off into demo chunks.

Yeah fallout would be tough, but they could give a quick look at the character creator and then throw you into a mid-game quest with a few weapons and just have the demo end either at the end of the end of the quest or just before the end of it.
