Well, Fable 2 is far from long. Personally, I think it's really shallow too. *Puts up flame shield* Each their own, but I wouldn't recommend it.
Oblivion gives you a giant game world to play around in and let's you play it to your liking, but you won't find much in interesting story or character development. It definitely isn't bad, but it isn't deep.
Problem you're going to bump into with asking for good RPGs is that the genre has so many different styles. With FPS you know there's a gun and you're shooting people, but there's a huge difference between Dragon Age and Oblivion in the same way Final Fantasy is different from Fable, and so on.
Since you have a 360, I would recommend Mass Effect 1&2. Or if you like sword and sorcery types, I like Dragon Age. Fallout 3 also offers hours of play. If you like JRPGs Final Fantasy XIII isn't the definitive title in the series but it's still fun. Resonance of Fate has a steep learning curve but is also pretty unique and entertaining.
It really depends on what you want to do and what you like.

Definitely check out Mass Effect 2 if you're looking for a good starter RPG. Hell, ME2 is almost straying into third-person shooter category, it's barely an RPG.

Dude, what the hell?! Fable II is absolutely amazing. There is so much in the world to do, and you can do whatever the hell you want basically! I agree with Oblivion though and Dragon Age is good.
