For me there are a few, I have over 50 arcade games at the moment and I just keep bouncing between them.
Trials HD - one of the absolute best arcade games to date.
Worms 2: Armageddon - A ton of fun if you either A. play locally with other people, or B. play online with friends.
Castle Crashers - Have not delved into this one too much yet, but another great game.
Lara Croft and the Guardian of Light - Outstanding singleplayer, outstanding co-op. Can not sing it's praises enough.
Splosion Man - Highly addictive, very long game. 4 player co-op also adds a ton of time to it.
Overall I think I'm going to have to say Trials HD is the one that has kept me coming back the most. Combination of the friends leaderboard and the insane difficulty level of the game makes it an absolute blast.
Geometry Wars: Retro Evolved 2 has great replay value and is a blast with friends.
Super Meat Boy is the best platformer I've ever played.
'Splosion Man is fun and can last you a while.
Puzzle Quest will have you beat the story -- which has more than a dozen hours -- once or twice
I bought The Dishwasher yesterday, and it's a great -- albeit incredibly difficult -- beat em'up, and it looks like it'll be a while before I finish all the Arcade Levels and beat it on Samurai -- oh, and it's for half price (MSP 400).
Castle Crashers pĺays well with friends and has a very long SP campaign, which has significant replay value with all the different characters available.
Castlevania: Harmony of Despair is a long-lasting game, as long as you're fond of the genre, since you'll want to upgrade your characters and farm all the godly items.
Plants vs. Zombies has several single-player modes to keep you busy for quite a while, and if you want, you can play against or with a friend (online or local).
Snoopy Flying Ace has a very disappointing single-player campaign, but the multiplayer is great and the modes are varied enough to keep you coming back to it every now and then.
Monday Night Combat is a game in the steps of TF 2, with sharp graphics and an entertaining online multiplayer. I definitely recommend this if you like TPSs with classes.
I'd recommend waiting for a while, if you like FPS's, since a game called Breach is coming for XBLA, at 1200 Microsoft Points. It's a shooter with full blown physics and destructibility, and looks great.
They're not what I'd define as addicting or long-lasting, but if you appreciate arcade games Braid is a must, and to a lesser degree, so is IloMilo.
Completely agree with Pac Man CE DX and Geo Wars 1 and 2. Haven't played Super Meat Boy myself, but I'll take your word for it.Pac Man Championship Edition DX

I know it isn't an XBLA game, but if you like tower defense games then you should check out the indie game "Sketchy Tower Defense". It's only a dollar.
Deadliest Warrior for me. It's a tactical fighting game with loads of rofl and wtf moments. Critics reviewed it as bad, but everyone I've shown it to loves the game and there are plenty of people online everyday. Not to mention the developers are on these forums communicating with the playerbase, something you don't see often.
