Devil May Cry 4

and

Resident Evil 5, I thought some of these looked really silly though, DMC ones looked pretty cool though

japanese games usually do large bosses well and borderlands wasnt too bad either

Gears of War 2, Lost Planet, Lost Planet 2, Dead Space had 2 . These are the only ones I can think of at the moment.

Borderlands, the final boss in the dlc is without the most difficult boss I've ever faced.

Besides that...

Turok has 3 really big monsters/dinos...turok also has this huge cave creature thats kinda hard to kill

If we're just talking about 360, HL2 has a couple big monsters(striders), but the very best huge bosses are in Shadow of the Colossus for the PS2.

Gears Of War 2, Lost Planet, Resident Evil 5, Turok, and I haven't got this one for the 360 yet (I got it years ago on the PSP) but looking from the videos - King Kong looks awesome!
