Having played both Skyrim and Fable II and III, I'd recommend Skyrim. Fable is plenty of fun, but Skyrim is much better.
Skyrim, then Dark Souls and then Witcher 2.
Or Dark souls, skyrim and then witcher.
You can't go wrong with DS or skyrim, but one can last you up to 60 hours while the other up to 130.

I played them both, check my achievements. Skyrim is better IMO.

Played both, both are incredible, i just prefer Witcher 2..nontrollI'm sure it's often overlooked, but more people have played it than you realize. As a matter of fact it's my personal favorite up to this point in 2012. And as to whether it's better than Skyrim is a matter of opinion.
This, I like Fable, but isn't near as good as these two gamesWitcher or Skyrim - both are great. The choise is yours ;)

My copy of The Witcher 2 is in the mail right now, so I can't give you a first hand perspective on that. BUT! I am a HUGE fan of both the Fable games, and the TES games. Skyrim is better than both Fable 2 and 3. But it's also double the price of both of them combined. If price doesn't matter I'd say go with Skyrim. Then pick up Fable 2 later on cause it's only 5$ used. Well worth it.
On a side note; After reading through multiple forums about The Witcher 2, it seems like that would be the best choice if you want a story driven RPG. Be warned though, it contains some a LOT of adult content. (Just incase that matters to you.)
Might I recommend Fallout 3/New Vegas?

I would have to say Skyrim. I love the openess of the game. There is a lot of freedom to explore if you want it.
I've didn't play Witcher yet but read up on it and it seems to be a fantastic. But I guess I'm biased by saying that for me no RPG will top SkyRim. I'm currently playing MassEffect 3, and yes it's a different type of RPG, and is awesome but SkyRim is the tops for me.
Also look at how playable SkyRim is after you've finished the game on the PC with tons of Mods to incorporate. This alone in my opinion puts SkyRim in a category all by itself above the rest.
I'm interested in hearing what you think of The Witcher 2 after some play. Thats what I'm playing right now, and I've yet to see what people are raving about. Don't get me wrong its not bad, but it sure does have a lot of cutscenes. Some of the cutscenes are very akwardly pasted together too. I'm not sure what thats all about. Also, at one point my current quest objective was to "defeat the dragon" and protect the king's children, but i never fought a dragon. Why is Geralt so hellbent on finding the assasin anyway? Why didn't they chase the assasin when they saw him when entering Flotsam? They were like "oh theres the guy we're after, but lets go into town and chill." Also I hope I get some kind of really bad a$$ attack/spell soon as i find the combat pretty boring.
