Puzzle Quest, Doom, Ultimate Mortal Kombat 3, Street Fighter 2, Teenage Mutant Ninja Turtles 1989.

If I had to suggest 2, I would say Puzzle Quest and whatever your fighting game preference is.

But if you have a pre-paid card, then get Puzzle Quest and TMNT 1989.

BOMBERMAN LIVE -- best game on Xbox Live Arcade.

Other than that, there's a ton of great puzzle games on XBLA -- now that Lumines Live is $10, that's a safe bet. They have a ton of DLC too so if you get tired of the base mode, you can download the additional stuff. Puzzle Quest is excellent, but it's also $15... it's basically a ported PSP game (as was Lumines, for that matter... and E4) so you're getting a $30 puzzle game at half price. It's sortof like Bejeweled but with RPG elements that make it feel fresh again. Super Puzzle Fighter II Turbo HD Remix is another really good puzzle game.

Also E4 is a pretty cool game, though it has somewhat selective appeal. And if you want something slower paced, I was surprised about how much I liked Catan. Of course there are also some classics on there... Sonic The Hedgehogs, then arcade classics like Joust, Paperboy and TMNT.

XBLA is a great setup and they have dozens of great games on there. You could pick any game and you have a 50% chance of it being great.

Puzzle Quest and Castlevania are the two that I've gotten the most enjoyment out of. They're both pricey for XBLA, but they offer much deeper experiences than most of the other ones.
