Little late in response, but this is happening to me now - just started immediately after I started playing the gfx-intensive COD:MW2.
Everything you describe, things look detextured, almost looks like the 16-bit colour/res problem you get when your video card driver isn't installed after a Windows installation.
It ONLY starts when I start to play the new COD, and when I drop back to the dashboard, it continues to have the same problem... once in a while, there will be an analog "flicker" on the screen, and it sometimes fixes itself... but as soon as I start playing in the 3d environment (non-menu based) of COD, it goes back to the same thing.
Oh, did I mention I get the RROD pretty much every time I shut the thing down? :P I have to wait for it to cool down, then 10 minutes later the box will turn on again... weird that only COD is what triggered the new gfx problem. I'm guessing the heavy draw on the GPU caused something to break... all the other games I've been playing lately haven't been that intensive on the graphics side (DJ Hero, Dragon Age, etc).
Oh well, this thing's been replaced twice already through the Xbox RROD warranty, but I keep getting cruddy 2nd-gen non-HDMI Premium refurbs as replacements.
Screw it - you win, Microsoft. I'm buying a current edition Arcade box so I don't have to deal with this crap every 8-12 months.
