I find it the best game on 360 ... Even though its multiplat... i like to pull the trigger of the 360 controller its kinda like pulling a trigger to a gun .. other than clicking a mouse .. or useing a ps3 controller ... thats why i think COD 4 is the best on 360 So far! .. IMO

But you are right it is a great game and fable 2 does look amazing, though I wouldn't say mass effect is better than oblivion in all fairness but thats just my opinion
Hmm i don't know, Halo and Gears were not that good, i've never played Assassian's Creed, so I am going to say GTA because it has a good single and multiplayer. COD only has a good multiplayer.

Age has nothing to do with how great a game is, and to be honest I'd pick a game lots of people think is great from a year ago, than the latest game everyone thinks is great now. Too many people are like sheep and always think the latest shooter is the best game ever. The fact that you discount Oblivion because it is "old" (released the same year as Gears of War) and would take a game no-one has played instead, shows you are probably part of this fickle group that crave the latest, rather than greatest games.
So no Oblivion (GS 9.6/10), Orange Box (GS 9.5/10), Bioshock (Metacritic 96%), Mass Effect (Metacritic 91%), guitar hero, forza, pgr, burnout...
