Frets on Fire is a pretty cool open source "guitar simulation" game. It is available on Linux, Mac, and Windows. The system requirements are pretty low so its an easy game for most people to run. It is a loosely based clone of the Guitar Hero series which originally started on PS2, then made its way onto Xbox 360, PC, and PS3. The controls feel perfect and pretty much exactly the same feeling as playing Guitar Hero. This also means you need a bit of hand-eye coordination. You can use your keyboard to play, but I prefer to plug-in my Xbox 360 Rock Band Controller (Use XBOX 360 controller driver). You can get a lot of songs from the plentiful communities. You can also get the Guitar Hero 1, 2, 3 songs on there. The vanilla version isn't as good as some of the fully modded versions. You get things like star power and such. I really recommend this game.
