I have had my son to the emergency room twice. Both to the Dr. twice and they finally told me it is some viral syndrome that will last two weeks. I haven't slept in a week and I am so tired. I wish this was over. So I hope everyone else is having a better time then me. I really hope no one gets this viral thing. Stay healthy.

Mixing Gelatin To make it easier to mix gelatin, sprinkle the powder over boiling hot water, and stir constantly. This will be faster than if you add cold water to the gelatin. Delicious Cinnamon Butter Mix 1/2 pound of butter or margarine, 3 tablespoons of cinnamon and 1/2 pound confectioners' sugar. This tastes so yummy on toast or rolls.

Roman Roll-Ups Recipe This recipe serves: 4 Cooking time: 15 minutes Ingredients 1 pound cooked boneless, skinless chicken breasts 2 ounces low-fat cream cheese 1 tablespoon fresh chopped basil salt and pepper to taste 4 large flour tortillas 1/2 cup shredded, low-fat mozzarella cheese 1 cup chopped lettuce or spinach leaves 1 cup chopped tomatoes Cooking Instructions 1. Have the kids shred the chicken into thin pieces and set aside in a small bowl. 2. Have the kids mix the cheese, basil, salt and pepper together with a spoon. 3. The kids can also help assemble the roll ups. Spread the cheese mixture on the tortillas. Top with chicken, dividing it evenly among the tortillas. Sprinkle the mozzarella cheese, lettuce leaves and tomatoes on top of the chicken. Roll up tightly. 4. You can make these ahead and chill them overnight, individually wrapped in plastic. 5. Slice in half on the diagonal and serve at room temperature.
