Video games, like any kind of art, are going to be perceived differently by different people. To one person, first person GTA may increase immersion and make them feel guilty for their character, but to another person, first person GTA might just be a cool new perspective for some crazy gangster rampages.
The real point is that in either case this is just art and no one is really getting hurt, so you should never judge or shame someone based on YOUR perception of the art in question. Remember that even though you feel immersed in your character, that guy shooting and stabbing people in first person mode may feel no such immersion. So let's not project our guilt onto other people.
