Oblivion role-playing?

So anyway, I recently got a 360, and everyone and their grandmother has been raving about Oblivion. While the concept of creating a character appeals to me heavily, I was curious about how you deep you can, for example, shape your characters personality? Are there dialouge trees and such when talking to NPCs? Or is it more akin to the actions you do rather then what you say? Like, could I have a icey heart or be a seductress? XD
The reason I ask is because I've been more accustomed to the linear Japanese-style RPGs and have heard nothing but great things about Oblivion. Now, I like a good story, and I have heard that Oblivion isn't like that and doesn't hold your hand in the sense that it's not a linear story. I'm cool with that, but what I want to know is, does Oblivion give you the chance to craft your own tale in Cyrrodil? Or is it more like Grand Theft Auto where you get a sandbox and just go on mission after mission, or just go on absolute random killing sprees?
