AC1 was completed skill-based. Your level really didn't have alot to do with how good you were at anything because there wasn't classes. You spent skill points to purchase skills and then spent your hard-earned exp to increase them, and also your stats were increase by experience spending. The amount of skills you could purchase were pretty decent and you could make some really unique characters. Like Archers who can buff themselves and then whip out the bow and do really good damage. Or mages who would be proficient in swords. All that mattered was what you wanted to become and you could do pretty much anything.
I never played AC2, but from what I saw, you would have a skill tree and purchase your skills off of that and pretty much everyone purchased the same skills and there wasn't too much for being unique in it. But that's just from what I hear. I'm sure it was better than that.
4 (almost made third). Unlimited SaGa - I know alot of people weren't really fond of this game, but I actually had a blast with it. At the time I was getting bored with alot of the same-old, same-old stuff and this was really nice. It kept me interested. Very different from most RPGs and it had 8 main characters and a really neat battle, and character growth system. I loved it.
3. Shadow of the Colossus - It was sort of short, but it was also awesome the entire time. The art style was good, the music was really good, and taking down a ton of humongous puzzle/boss combinations one after another was a total blast. Couldn't put it down, and played through it a good 5 times in my first two weeks of owning it.
2. Shin Megami Tensei: Digital Devil Saga - The story was fantastic, it was a fairly difficult RPG, and it almost punishes you for not giving characters roles in your party. I really liked the style they went with.
1. Shin Megami Tensei: Nocturne - It had some stuff akin with my number 2 pick, but of course it would, they're both SMT. Nocturne was my favorite game for PS2, because it took an end-of-the-world approach in modern day, and actually made it pretty interesting. It was a pretty far shot from the norm of RPGs. Adding in the pokemon-esqe recruiting system, and the fact that there was multiple endings, and I had a game that I spent a ton of time playing. Going to be my favorite RPG of all time for a while, at least until another SMT game comes out.
Here's a list of RPGs you haven't listed for PS2 that should play.
