First, While playing the games on your own tv is a lot different than any internet picture/movie, since a paused version on the internet is blurred and only as good as the camera that took it. Secondly, Mario is not a graphically intense game. You really can't improve mario games after sunshine, since the graphic content is simple by default. But from the opinion of someone who has both games now, Galaxy is much clearer and larger than sunshine; much like how prime 3 is so much clearer and bigger than prime 2 or 1. The texures and water in galaxy are actually extremely well done too.
