December 31 of any given year is just a place holder for products that don't have a release date yet. They do that for types of media and hardware and almost every retail place. It's not a confirmed date.
I think it will work. It'll be a nice change of pace...plus even though a lot of the platforming in the previous titles took place in a jungle setting...how often did you platform using the jungle foliage? Nothing will change too drastically in my opinion.
It could be a lot of different factors. Check your wireless settings on router sometimes the firewall can be a bit tricky with the PS3's wireless adapter. Otherwise, I'd recommend what everyone else is suggesting wire your PS3 to your router.
