I would say get a PS3 since you can always play your old PS2 games on it. You'll have some returning franchises this fall such as Ratchet and Clank and SOCOM. In addition, you'll have new IPs such as Heavenly Sword, Lair, and Uncharted to name a few.
Sony is constantly adding new features to the PS3 such as up-scaling PS and PS2 games. It also allows for remote play using your PSP (don't know what game if any takes advantage of this but its still a new little feature).
However, the 360 does have Halo 3, Mass Effect, and Too Human coming up this fall as well.
The DS has a massive library so you couldn't go wrong with that purchase. The Wii is also a wonderful system that can play gamecube games. Since the Wii has a large installed base, you can bet devs are currently coming up with games to meet the demand. A few that stick out in my mind are Metriod Prime and Super Smash Brothers.
But in the end itdepends on what games appeal to you the most. Since your experience has been with Sony I would say stick with it.

The PS3 is a great system. It's quiet and doesn't over heat. Thats not to say the 360 is loud because I have one as well but the PS3 is noticeably less noisy (but that really doesn't matter if your playing Gears with the volume turned up).
I agree with you that we as consumers should demand greater quality of ANY product we purchase wether its the PS3, xbox 360 or Wii.
