I've been using Windows 8, installed on my early 2011 Macbook Pro using bootcamp for about a week now and I'd say it's worth waiting for to get the $40 upgrade. There are some bugs but the only ones I've seen are those interacting with the function buttons on my Mac so, if you are installing on a previous Windows system I'd expect you to have a better experience. Otherwise the OS is very smooth and usable - the Metro UI can be annoying especially when trying to tweak system settings but third party applications can disable it. Hope this helps with your decision.

My first build which I built about 2 weeks ago took me around 3 hours from opening the case to actually finishing installing Windows.

It sounds like it's most likely a video card issue. Try and swap out the video card for a different one if you have access and see if the problem is solved. Edit: Didn't see the integrated video bit. Try installing a dedicated video card.

The fact is though, most people have not yet played the demo. Which explains why there is so much hype.
