Need more to go on, really. Many games let you create stuff - it's a matter of what you want to create.
There's Spore which is... umm... Spore. Kinda hard to classify that one but you can spend time creating LOTS of stuff in it and sharing it with others.
Or there's Galactic Civilizations 2 or 3. Those are 4X games where you get to design your own ships.
Or Kerbal Space Program where you have to design your own rockets and jet planes.
I've got a character I've been using for many years now named Tesslah. She was born back in Asheron's Call when I looked out into the world and saw almost nothing but white guys. So I made a new character that was my opposite: male became female, hairy became bald, white became black... only the height stayed the same. I've been playing various incarnations for over a decade now. Some fit the mold better than others.

Here's a little fun from back in the City of Heroes beta test of the new Architect feature where you got to make your own missions. Thing is, the buildings you do them in are HUGE. There's also a fairly rare event where Rikti spaceships would fly through the sky, zapping players and dropping Rikti invasion forces. Did anyone check to make sure those paths didn't intersect with any of the new buildings?
@the_bi99man: Heh - I'm exactly the opposite. I use those FoV sliders to push it down until the corners look pretty normal. Portal 2 drives me nuts because the FoV is so high! (It's even worse under 3D Vision. Not only are things in the corner warped, they're twice as close as they should be. It's downright sickening.)
Armor and hair mods probably add some, too, though I think you're mostly looking for improved graphics. Textures really help quite a bit if you've got the power for it.
Oh, and don't forget the basics! Messing around with the ini file is a must! NVidia made a very nice article back when the game first came out that's very handy.
