I downloaded the demo last night (early this morning actually) 5am lol
Here are my thoughts after several playthroughs:
I love the co-op aspect of it. Always having someone there to back you up is really nice, particularly when you've got a guy with a sack on his head chasing you around with a chainsaw... :? I like the fact that there are several different control configurations you can use, as opposed to RE4, where there was only one  The fact that you can now aim with the right stick instead of the left is nice as well. After playing RE4 and having to use the left stick to aim, I was thinking "I hope RE5 let's you aim with the right stick" Thankfully, we can. :D Overall, the controls seem to be a bit more polished, and a bit easier to work with than in RE4. I'm using the "D" configuration in the demo btw.
As for the gameplay, it's great. I had no issues with framerate, the graphics were very nice, and Sheva is really helpful. Trust me, I can't say it enough, Sheva is a big help.
Now for the Pros and Cons:
Pros - Co-op play both online, and offline, great graphics, controls are great, consistent framerate. Overall a great experience.
Cons - You still can't move AND shoot. :x You can't move once the knife is equipped
Yeah, that's all the cons I could find, and there not even really significant problems. In fact, probably the only reason I'm complaining about this stuff to begin with, is because of being able to move and shoot in pretty much every other game I've played that involves guns...It's not too hard to adjust to not being able to move and shoot, but it certainly felt wierd to me, especially after playing Dead Space so much :P
If I were to rate the game, I'd give RE5 a 9.5/10. Excellent game, so many improvements from RE4, yet it still has that same RE "feel" to it. More refined, multiple control setups, co-op play, I mean, you can't go wrong with this. RE5 is going to be great.
