On the phat I know it's super easy to just lift the anlog nub right off with your fingers. That might make it easier to clean for you and when you're done you can just press it back on.
Way better d-pad. I can actually hit diagnols with ease now. I have a phat psp that I opened up to do the circle tape mod on the dpad. It makes a very noticable difference, but it's still not as good as the slims.
The weight is pretty significant for me too. I can do extended gaming sessions with far less, if any, hand discomfort.
For video conversion I would recommend xvid4psp. It's free and does a fantastic job. I tried using PSPVideo9 and more times than not ended up with unplayable videos. Xvid4psp has an option to convert the video to 16:9 widescreen.
I have both a fat and a star wars white slim. I honestly can't think of one single thing about the phat that I prefer. Well there is one, but that's not discussable. The new slim has a "usable" d-pad, unlike the phat, and the analog and face buttons feel a lot more responsive. It's also lot easier to hold for me. Sure the phat seems more sturdy, but now I can actually play fighting games, gradius/salamander portable, etc. without having to use the analog stick.
I'm surprised no one has mentioned the huge improvement of the d-pad and the more tactical feel of the buttons. That alone compelled me to upgrade ;) Also, it seems a lot more comfortable to hold during long play sessions. I ended up getting the white star wars slim which also really never shows fingerprints like my phat did.
