First off I would like to wish everyone a great Sunday. I hope all of you had a relaxing weekend and are having a wonderful Sunday. :) I know that the weekend went by so very fast. And now that they set the time back this morning today seems to be going by so slow. Just makes me so sleepy and it will be a very look day today until I get use to this time. One thing about it is we gained the hour that we all lost when they set the time ahead in March. :)
I don't know who on here ever watches wrestling but we lost another great wrestler. She was the queen of wrestlers. She went by the name of Falulous Moolah. She use to wrestle with Mae Young. Moolah died suddenly down in Columbia South Carolina. If you would like to see her career you can go to wwe.com website and it tells you about her. She will be well missed. She was up in age. They think that she died of natural causes. She is gone but not forgotten. :( She won alot of belts. Mae Young was her best friend, and they always were together. My thoughts and prayers are with her family and friends. The wrestling industry has lost an icon.
FUNNEL CAKE RECIPE
1 1/2 cups sifted powdered sugar
2 to 3 tsp grounded cinnamon
3 eggs
2 1/4 cups milk
1/2 tsp vanilla extract
4 cups all-purpose flour
1 cup light brown sugar, firmly packed
1 tb baking powder
1/2 tsp salt
Vegetable oil or shortening for frying
Large funnel for dispensing batter
Preheat the oil or shortening in a deep-fat fryer to 375 degrees.
In a small bowl, combine powdered sugar and cinnamon, mixing well; set aside.
In a large mixing bowl, whisk the eggs, milk, and vanilla, mixing well.
Combine the flour, sugar, baking powder and salt together in another bowl. Stir the flour mixture into the egg mixture until batter is smooth.
Hold your finger over the funnel opening, fill with 3/4 cup of the batter. Place your hand over the oil and carefully remove your finger. Scribble and criss-cross the filling into the hot oil. Fry until golden on both sides. Remove from the oil and drain on paper towels.
Dust with the powdered/sugar mixture. Repeat the process until all the batter is used.
I hope you will enjoy this recipe. This one reminds me of the ones that they have at some of the flea markets and the fairs. Especially at the fair. They smell so good when they are frying them up. I love them. Enjoy my friend. :)
