In general a medium sensitivity is being able to do a 180 from side to side of your mousepad. If you have a small mousepad, a "regular" one then it would be a little lower to have a medium sens. Sens is very personal and should be experimented many times over.

I personally would WANT to play against xbox gamers, on a fair playing ground. If for CoD4 you can play against xbox players then I will buy and actively play that game for more than 2 seasons.
