I actually know why... some games have specific coloring, sound, and tilt meant to absorb gamers. There are actually studies that game-developers do to see how these things effect the players. Such games with certain effects are:
-Pokemon Blue and Yellow for Game Boy Color: tilt to the battles and the sounds make the player very ingaged. also, the flashing motion going into the battles was specifically designed to interfere with the brain and make the game addicting. As such, this is why some RPG games are extremely addicting even though they aren't that good.
-Grand Theft Auto Vice City: the sensless violence and "strange" graphics of the game actually mess with you for up to twelve hours, not intentionally done, though, because this is why the media blames violence on the games youth play.

Anyway, Mario Galaxies tilt and colors probably are irritating to your brain and sense of balance (mostly from your eyes) making you nauseous. If you aren't as engaged while playing (ie. keeping the TV relative to the room around you) you won't get this problem.
