360 obviously allows for more detail and awesome graphics, the PS3's graphics just seem less detailed. If you want to see what I mean, look at the "Orange Box" screenies...the beam of light is basically just a beam of light, with the 360, you can see that that there are seperate streams of light flowing throughout the entire beam. And in Assassin's Creed, you can even see the folds in Altiar's robes in the PS3 version, this too is also less detailed than the 360.
