Because Snake isn't as fast strong or durable as a human can possibly be. He is average, he cant break hand cuffs, he cant dodge gunfire and he gets knocked out when a genome hits him in the face with a rifle butt.

Bats IS a normal human. He's not been modified to be a super soldier, he's not a part of any secret organisation, and he's not trained all his life. He began when he was in his late teens, and if we're following comic lore, he never trained to be 'the best a human can do'. He doesn't know all the martial arts and fighting styles in the world, because that would make him incredibly old and beyond human to master everything.Sigh....I hate having to correct people.... Snake was never modified to be a super soldier, because Big Boss was never a super soldier. Batman began his training when he was 8 so for most of his life. He did train to be as physically capable as possible for a human, he is strong fast and as durable as human can be, Snake isn.t He has mastered every fighting style on the planet and I have proof of it, its been stated on panel numerous times.
Batman has been around for 70 years almost, if the writers kept him the same then he wouldn't be very popular like he is today. Humans that have actually trained for most of their lives can dodge gunfire. So its perfectly valid. Maybe not in real life but it isn't so far fetched even for comic standards

The same thing can be said about any fictional character that they can do this because the writers say so. Atleast Hideo kept Snake true to who he is. If I remember right the whole premise of Batman was his gadget and fighting skills. Not his super human ability to dodge bullets and break missile proof glass. A normal human being can't kick down a sleel door.
