It was game of the year for a reason, and thats because it was perfect. The world of Morrowind was huge, and modding was fun as hell, but even playing just the original was great because of a pretty good story, cool NPC's, and some of the best landscape I've seen in a while, and there is a lot of cities to explore. Going with the prisoner arriving on ship type thing really started the game basically because you have know idea you're the most important person. With a good start and good finish, it makes all the hours of playing it fun. The armor and weapons look great, and the graphics were pretty good at the time. Besides a good and long story, the soundtrack also made a big gameplay factor. Most are port cities and the music was perfect with the environment and battles and quests. Oblivions and Morrowinds soundtracks both did that and I'm glad because I think that is a huge factor on gameplay, as I said above.
The battles were also good, although not as good as Oblivions, it was enough to make it fun and grabbing and stealing treasure from people was also great fun. The guards were hard though :). Preparing magic and casting spells is also a lot more advanced than Oblivion, basically because you ready and you can fail at it based on skills or if you have a lot of armor (like DnD), so that made it fun and challenging. But in the end it shows Bethesda once again made history and that Elder Scrolls remains big and open and remains the best game series ever made.
