Tales Of Symphonia, RE4, Soul Calibur 2,Super Smash Bros. Melee, Zelda Wind Waker, Mario Kart Double Dash, Animal Crossing, Harvest Moon (there are alot of these), Super Mario Sunshine, LOTR:ROTK, LOTR:TTA, LOTR:TTT.........Sheesh I think that's enough to give you an idea :)
If you're not planning on getting a Wii any time soon (I assume you're probably not since you just got a Gamecube) then you should get The Legend of Zelda: The Twilight Princess for the 'cube. That's the version I played and it's excellent. The only other suggestion I'd give that hasn't been thrown out there already is Killer 7. This is probably my second or third favorite game for the 'cube. It's very unique, but wholly awesome.
