River city ransom is easy with two people. This may sound like I'm kidding yah, but Contra 3 on easy mode with seven lives is not too hard if you can memorize some parts.
Twisted Metal, Jet Moto, ace combat games for ps1/ps2, Sonic 3 on Genesis (with the save feature it was the only sonic game i could beat), and thats all i can think of at the moment.

No freaking way Jet Moto is easy. That game is absolutely brutal. If make a turn just slightly to fast you're all out of control. And if you slow down for even a second the computer just dominates you.
Super Mario RPG. It was fun, but ridiculously easy. I never really felt challenged. CrimzonTide
I was. Probabbly because I just SUCK at RPG games though.. so I guess my vote doesn't count on this one... :( Kirby adventure was probabbly the easiest NES game i've evr played.
