It's actually rare for me to have a game where I have no interest in playing through it again. But the one I've played the most times is RE2.

Surprisingly many of them now when I think about it... First to come in mind is fallout 2, baldurs gate 2+expansion, cod 2, warcraft 3, dungeon keeper 1 and 2, company of heroes (multiplayer), total war series, diablo 2, starcraft, max payne 1 and 2, monkey island series and many snes games like final fantasy 6... Guitar Hero 2 and Mirror's Edge. I'll probably never beat all the time trials in ME, but for some reason, it doesn't stop me from playing.

Crysis and Warhead - The first 6 levels on the first, the last two on Warhead
Flight sims - I'm sure they're boring to many. But, I tend to keep them for years at a time.
