Not necessarily my favourite game, but the one that defines what the console was all about:
NES - Super Mario 3: The 8-bit platformer's ascend to perfection, and the first game where Mario turned from an arcade-like platformer to an epic adventure.
SEGA Megadrive - Sonic: Well, it's Sonic.
Nintendo 64 - Super Mario 64: Redefined the platforming genre in such a majestic way that it represents everything N64 stood for - the perfect transformation from 2D to 3D (other examples of this success are Ocarina of Time and Goldeneye).
Playstation 2 - Grand Theft Auto III: The first time such a good and big free roaming game hit the shelves was under the banner of the PS2. Might've created or at least greatly shaped up a genre, and redefined the way we experience action games.
Gamecube - Star Fox Adventures: Showed very early on what the Gamecube is capable of graphically, and also demonstrated the different approach some of Nintendo's old franchises got during this era.
Xbox - Oddworld: Stranger's Wrath: a very atmospheric and innovative game that showed Nintendo isn't the only platform to feature this kind of games.
Nintendo DS - Mario Kart DS: a great game that is probably the first one on a Nintendo platform to feature a heavily popular online option.
Wii - Super Mario Galaxy: took a huge leap for the platforming genre and demonstrated both the graphical capabilities of the Wii as the potential its controls offer.
