I used to use any old mixure of crap and make do with it. As long as I shoved archers on a hill I let the rag tag bunch of whatever charge in and sort themselves out, of course I waited until the enemy was in good range of my archers.
I found that due to the limited number of arrows, the fact they bottleneck all the castles, no tactics worked that well, it was all down to letting the archers thin down the ranks and then go charging in. Nord Huscarls are the safe bet as they are the best ground troop to move in after the archers.
One thing i can say, as the hero use the Awlpike and a nice sword and shield secondary weapon combo. The Awlpike is far better then using a lance, it's flipping lethal! I would wait for the enemy to get in range of the archers, then as my infantry charge my calvery come in when the lines broken, or sometimes I get inpatient and charge in early. I would stab enemies in the face in a canter / gallop, one shot kill fast, stab, stab, stab, stab, stab!!! People die, blood, murder and rape. I would impale the enemy vassal on my awlpike at the end of combat and watch him slide down slowly, except the game didn't let me.
