The problem with what you are suggesting about the control scheme is that its not really survival horror. At least not very good survival horror. The way the REmake is made with 'clunky controls', 'annoying' camera angles and slow door openingis the whole point. Its there to improve creepiness, atmosphere and tensionand make you feel claustrophobic etc. If they make it like RE4 it becomes a shooter, not a survival horror game. The devs of Silent Hill mentioned this recently in an interview about their new Wii "reimagining" (so, remake then?) of the first Silent Hill. They want that atmosphere, not emphasis on action. Another reason why I love Fatal Frame , Clock Tower and the Forbidden Siren series. They focus on inability to fight back (by conventional means in FF's case) and there are very tight spaces too..
RE4 had one creepy moment for me personally, and that was the bit where I first came across a regenerator. Why? Because when I blew his legs off, he was faster than me, and I only just made it to the door. Thats how Resident Evil games were much more often before that game, more thrilling for me.
It would be much better if they remade RE 3 Nemesis and RE 2 but kept the controls, like the did with RE 1. That game really showcases what the GC could do graphically, and why the Wii can do some nice graphics if it devs tried hard enough. I mean, when games that look that good exist on the GC, you can see why people are annoyed that many Wii games dont strive to AT LEAST that level of graphics.
