Well, GHIII was a dissapointment, for me. The audio sync was off a bit, they messed up the frets on the screen and nerf'd the characters.

Rock Band has more than GHIII, weekly DLC, CUSTOM characters, and a better soundtrack *SO COLD*.

ROCK BAND, FTW.

I've only played GH3 without the guitar and like it since I've never played any in the series before. From what I've been hearing Rock Band is suposed to be the better party game, but if you don't game it up regularly with a bunch a people Guitar Hero is probably better because of the more challenging gameplay.
