If you wanna count the sport-based fighters(like WWE/wrestling, boxing and UFC/MMA) games that's fine with me.
Anyways
WWE:
Smackdown Vs. Raw 2007
2008
2009
2010
2011
12
2K15
Dragon Ball Z:
Burst Limit
Super Smash Bros:
Brawl

How are you gonna make this thread and not list one fighting game? :P
SF4 is the only one I really play anymore...
I own all the recent NRS games but don't particularly care for them.
Used to be a UMVC3 fanatic... not so much anymore but I do play it on my Vita TV every now and then.
I never got into the Smackdowns so I can't really comment on them. I also have the latest Smash Bros on both U and 3Ds and that game's pretty fun, although I often question just how skill based it is. I'm not very current on the DBZ games but they were pretty fun and surprisingly well done for an anime licensed fighting game franchise.
I guess the only comment I have (not a criticism, just an observation) is that I was surprised that there are not "traditional" fighting games in the list. Smash Bros is kind of its own category, and most of the rest are wrestling games. I figured I would see names like DOA, Tekken, Street Fighter, Soul Calibur, Mortal Kombat, Guilty Gear, KoF, BlazBlue, etc or some of the indie takes on the genre like Skull Girls, Divekick, and the like. The only one of those that to me is a straight up fighting game is the Dragonball game.

@Byshop: I will try to get more regular/traditional fighters if I can, I also used to own one for the N64.
@lucianocasanova: never been a competitive person. And no matter what, I've never found them fun to play at all, even if I was doing well.

Just get whatever you like. Personally, I grew up on SF2 so competitive 1 on 1 fighting games are more my thing.

A lot. lol
Wii:
PS2:
Xbox:
Wii U:
PS3:
Xbox 360:
Xbox One:
Sooo many. Love the genre. Some of my Favorites are:
Entire Soul Calibur series
Most Mortal Kombats
Many entries in the King of Fighters
The Last Blade 2
Street Fighter 3
Capcom vs SNK 2
Samuria Shodown Anthology
Fatal Fury Battle Archives and Mark of the Wolves
Naruto Ultimate Ninja 3 and Clash of Ninja 3
Powerstone
Bushido Blade 1 and 2
Want to get Blazblue CP and DOA Last Round sometime soon
Dragonball z burst limit, raging blast 1 and 2
Naruto UNS 2 and 3
Soulcal 2, tekken 6
Tatsunoko vs. Capcom
I've played several fighting games but I've only ever owned three:
Tekken 6
Narutu Shippuden Ultimate Ninja Storm 3
And Dead or Alive 5..... and Dead or Alive 5 Ultimate.... both of which I had to import from the UK because its not actually available in my country..... well DoA5 Vanilla is now but DoA5 Ultimate and DoA5 Last Round (except on 8th gen) aren't.
I have absolutely no desire to own any other Fight Games other than Smash...... however I'm only 4 Dollars away from buying Virtua Fighter 5 Final Showdown..... I've been thinking about it it but I'm not sure if I'l go for it.
Oh that reminds me, when I got DoA I gifted my Tekken 6 to a friend..... he doesn't play it....
Street Fighter IV is the only one I play regularly. But I really wish there were more 2-player co-op games, like the old side-scrolling beat-em-ups. Does anyone know if there are any modern takes on that genre?
There's an updated version of Double Dragon, but I don't know if it's any good. About a year ago they also re-released the arcade D&D side scrolling beat em up arcade games as a single title on Steam called Dungeons & Dragons: Chronicles of Mystara. I loved those games when I was a kid. There's also a companion game to the Kickstarter funded movie Kung Fury. Reviews on that one have been pretty good.

If you have a PS3 or Vita I'd recommend Dragons Crown, one of the best Beat em Ups I've played in years!
@pimphand_gamer: @jezh: @yonyz: @RSM-HQ: @Byshop: @Lulu_Lulu: I wasn't really saying that comment in a serious way(though I really do wanna get some traditional fighters just to add some diversity in my collection, oh and also
Beat em ups and emulation roms can count(didn't add the roms myself though, because they are not the real/actual products, so I added my actual collection instead)

No they can't because I'd have to moderate any such suggestions and give strikes to anyone asking for or suggesting them. Emulation discussion is -very- against the rules.
However, there are plenty of classic games on Steam that (while they may be emulated on the back end) are sold by the legitimate copyright owners so those suggestions are fine. Among those I'd recommend the very classic Golden Axe series by Sega.

I have Persona 4 Arena Ultimax on ps3, Dead or Alive 5 Last Round on ps4,and Skullgirls on Steam
Think that's it
Wow everyone has regular fighters? Was expecting at least one from the other types(platform fighters, wrestling, boxing, etc)

I have absolutely no issue with your list of games, most of them are considered hybrid fighters; so still fit the topic you've made. However, Beat em Ups follow a drastically different set of rules to a fighting game.
All in all, play the games you like. Nothing wrong with variety :)
Every fighting game I own:
Game Gear - Power Rangers, Virtua Fighter, Mortal Kombat 2
Genesis - Ninja Turtles TF, Mortal Kombat 2
PS1 - Jurassic Park Warpath
Dreamcast - MvC2, Power Stone 1 and 2
PS2 - DoA2, Mortal Kombat Deception
Gamecube - Smash Bros, Soul Calibur 2
PS3 - Mortal Kombat, Soul Calibur 4
I'm not big on fighting games but those are some favorites. I'll pick up the new Mortal Kombat after a price drop and when Predator is available.
Injustice: Gods Among Us. Not a big fighting game fan but yeah, I own that. Might pick up Street Fighter V too if it turns out good.
Tekken 6 / Tag 2
Soul Calibur 4/ 5
Street fighter 4
WWE 08/ 12/ 13/ 2k14
The King of fighters XIII
Mortal Kombat (2011)
Fight Night Round 4
