The first one I remember anyway was Super Mario RPG for SNES. RPGs simply didn't look that good back then. I believe there is a separate chip in the cart that helps the SNES make the game look that good IIRC.
Crysis was the first holy shit game for me
yeah, same. When you came over the hill in the beginning on the little hut and saw the sunrise...I was like "Wow, now we are cookin' with gas".
Games have always been improving visually, and I have been impressed before, and I had been gaming for a long time prior to Crysis. But when that game came out it was just mind blowing.
God of War 2. I played it on a tube tv that had 16:9 ratio and it had higher resolution than any other tvs during that time.
The original Assassins Creed. Really hammered home the generational shift for me.

Yeah, that was one that really amazed me too. I can remember watching the E3 2007 gameplay demo with my cousin, and being blown away by how detailed everything looked.
I can remember two specific instances where I really was blown away by the visuals.
1. Quake 3 Arena - We had just gotten a brand new Pentium III with a Voodoo 3000. The game ran like a dream, and look the part. One of my most vivid memory, in term of visual awe.
2. Metal Gear Solid 2 - I can remember the general reaction of people after the reveal. This game looked way ahead of everything else being release on the platform at the time.
A lot of games impressed me, in term of visuals, but never as much as these two games originally did, back then.
