Fighting games are not my favourite genre (though paradoxically, I play quite a lot of them) so I can only go on the ones that annoy me the least.
Virtua Fighter 4 - I like the enormous variety of moves and really beautiful moton capture. (the latter is also a strength of the Tekken series, but it doesn't play half as well)
Virtua Fighter 2 - Arguably hasn't dated that well, but was a complete revelation to me when I played it as a child. Nowadays, I still love the outstanding soundtrack, badass taunts/voiceovers and hilariously weird physics.
Dead or Alive 4 - Even the brutal AI in arcade and story mode has caused me a lot of hair loss, I just love how this game feels and plays and I like the factthat reversals are not half so easy to execute as in previous DoA games.
Soul Calibur I/II - I can't choose between these two. Again, a fighter that feels very natural to play and the extras/unlockable are aweseome and great fun. I agree with critics of the series thatthe moves vend to look very stilted and awkward on screen compared to VF and Tekken, butthis doesn't spoil my enjoymenttoo much.
I really must play Bushido Blade.
